This is the easiest pickle recipe I have ever used. It requires no special equipment! The pickles are amazingly crisp! By Bettie Walter of Hickory Acres Meats
1 lb cucumbers
¾ lb onions
4 teaspoons table salt
2 tablespoons water
¾ to 1 cup sugar
½ cup cider vinegar
1 teaspoon dried dill weed OR
1 teaspoon pickling spice (or your choice of spices)
THINLY slice cucumbers and onions. Mix with salt & water in a glass or plastic bowl. Set aside for 2 hours.
Drain but do NOT rinse. Add sugar, vinegar, & dill. Let stand, mixing occasionally until sugar is dissolved & fluid covers the cucumbers. Pack in glass or freezer bags leaving 1 inch of headspace. Seal, label & freeze.
